Stuffed Brinjal(Bharwa Baingan)

Most of us find brinjals boring so my Aunt has found a recipe to make the brinjal tastier and interesting. So here I bring a recipe from Mrs Mita Mandal's recipe list who being a modern passionate cook makes every recipe wonderful with her inventions.
Stuffed Brinjal:

Ingredients:
  • Brinjal
  • Onion
  • Garlic
  • Mustard oil
  • Turmeric
  • Red chilly powder
  • Cumin powder
  • Coriander powder
  • Curd
  • Salt to taste
  • Sugar to taste
Recipe:
  • Wash the brinjals thoroughly and then slit from the middle. Cut out the inner part(flesh) of the brinjal make it empty. Keep the flesh of the brinjal aside.
  • Mix the brinjal with salt.
  • Now grind the onion , garlic and the flesh of brinjal which we kept aside earlier into a paste.
  • Now take a cooking pot put two spoons of mustard oil in it. Now pour the paste in it and cook well. Add cumin powder, coriander powder , red chilly powder, sugar and curd. Stir well and keep aside to cool. This is the stuffing.
  • Now take the brinjals and stuff them with the stuffing.
  • Now again put some mustard oil and transfer the brinjals one by one in it. Cover with a lid.(Whole cooking must be done at low flame) Stir the brinjals after some time.
  • Stuffed Brinjal is ready. Serve hot with Chappatis or Parathas!
